Recipe


This Recipe is wonderful for that summer day when you want something with a lot flavor! It does have a kick of spiciness. :) It is a wonderful meal for those who like crawfish. My Mom and I made some rice to go with it. This is about a 30 minute meal (without the rice) and is very easy to make. It's clean-up is very easy, too. It's very delicious, and filling (with rice)! Serves four people.

Cajun Crawfish

Ingredients:
2 tsp olive oil
1 medium green pepper, chopped
1/2 cup onion, chopped
2 medium stalk celery, chopped
2 medium garlic cloves, minced
1 pound crayfish (crawfish), tails
1/4 tsp cayenne pepper or 1 tsp cajun seasoning
1/2 tsp table salt
1/4 tsp black pepper
2 medium scallion (chives), chopped
1 Tbsp parsley or cilantro, fresh, chopped

Directions:
~ Heat oil in large skillet over medium heat. Add pepper, onion, celery and garlic;
cook, stirring occasionally, until soft, about 5 minutes.
~ Add crayfish (crawfish), cayenne pepper, or cajun seasoning, salt and black pepper; stir to coat. Cook until crayfish (crawfish) are bright pink and cooked through, about 5 minutes.
~Remove from heat and stir in scallions (chives) and parsley or cilantro. Yield about 1 cup per serving.

Notes:
If you can't find crayfish- also known as crawfish- you can substitute large, peeled, deveined shrimp in their place.
